Recipe 9: Vegan French Toast









Vegan French Toast
  • 1 1/2-2 cups nondairy milk (I used soy)
  • 4 to 5 tablespoons flour
  • 3 teaspoons vegan sugar
  • dash cinnamon
  • 4 bread slices (I used Ezekiel 4:9 Sprouted Grain Bread)
  • nonstick spray
  • powdered sugar or cinnamon, to taste

Method:
1. In a bowl, mix together nondairy milk, flour, sugar, and cinnamon to form a batter.
2. Dip bread, let it soak in batter, and fry in lightly greased pan until golden brown. While one piece cooks have another soaking in the batter and ready.
3. Serve sprinkled with vegan powdered sugar or cinnamon, vegan butter (I used Earth Balance), and organic raw agave nectar on top.

Recipe 8: Super Greens "Chick'n" Salad

Another recipe post by Anthony featuring one of our favorite leafy greens...kale! Kale is very high in beta carotene (vitamin A), vitamin K, vitamin C, lutein (antioxidant) , zeaxanthin (antioxidant and beneficial to retinal health) , and reasonably rich in calcium. Super Greens "Chick'n" Salad
-low-fat, packed with protein and antioxidants
  • Dinosaur Kale
  • Red Kale
  • Chard
  • Spinach
  • Tat-Soi (Tat soi tastes like a milder version of mustard greens and has a texture similar to bok choy. It's low in calories yet high in minerals, vitamins, and health-promoting antioxidants) 
  • Avocado
  • Organic Quinoa 
  • Organic Goji Berries
  • Garbanzo Beans (Chickpeas)
  • Black-Eyed Beans 
  • Tortilla strips (He used Ezekiel 4:9 Sprouted Grain Taco Size Tortillas). Cut into strips and then lightly fry them in oil of choice.  
  • Gardein Chick'n Scallopini (14 grams of protein in 1 piece!) sauteed in San-J Sweet & Tangy Polynesian Glazing & Dipping Sauce
  • Lemon juice 
  • Dressing - Mix mostly Trader Joe's Vegan Goddess Dressing and a small amount of Trader Joe's Sweet Chili Sauce
Mix all ingredients together and top with chick'n.
