Super Greens "Chick'n" Salad
-low-fat, packed with protein and antioxidants
- Dinosaur Kale
- Red Kale
- Chard
- Spinach
- Tat-Soi (Tat soi tastes like a milder version of mustard greens and has a texture similar to bok choy. It's low in calories yet high in minerals, vitamins, and health-promoting antioxidants)
- Avocado
- Organic Quinoa
- Organic Goji Berries
- Garbanzo Beans (Chickpeas)
- Black-Eyed Beans
- Tortilla strips (He used Ezekiel 4:9 Sprouted Grain Taco Size Tortillas). Cut into strips and then lightly fry them in oil of choice.
- Gardein Chick'n Scallopini (14 grams of protein in 1 piece!) sauteed in San-J Sweet & Tangy Polynesian Glazing & Dipping Sauce
- Lemon juice
- Dressing - Mix mostly Trader Joe's Vegan Goddess Dressing and a small amount of Trader Joe's Sweet Chili Sauce
Mix all ingredients together and top with chick'n.
